Eat Cheap But Healthy: $8 Family of 4 – Meal 4

You CAN feed your family healthy, nutritious meals without spending a fortune for food.
This is day 4 of a 5 day presentation that shows you 5 different meals that you can make for your family that will cost $8 or less! Come back tomorrow to see the next meal!

Bacon Salad on Cheese Toast & Lemon Blueberry Bowls
Ingredients:
* 6 eggs
* 8 slices bacon
* 8 slices of Texas cheese toast
* 1/2 C mayonnaise
* 2 t mustard
* 1/2 of a cucumber, chopped
* 12 basil leaves
* 1 (4 oz.) box lemon instant pudding
* 1/2 fresh blueberries, rinsed and drained
How to Make It:
Cover the eggs with water in a medium saucepan.
Position the pan over high heat and bring the water to a brisk boil.
When the water is boiling, cover the pan and remove the pan from the heat source.
Allow the eggs to sit for 6 minutes.
Remove 2 of the eggs and leave the remaining eggs covered in the hot water for 4 minutes.
Peel and rinse the 2 eggs under cold water and set aside.
Remove the remaining eggs, peel, rinse and chop.
Place the bacon strips in a skillet over medium heat.
Cook the bacon 5 minutes then flip.
Continue cooking the bacon about 5 minutes or until very crisp.
Drain the bacon on paper towel dabbing off any excess grease.
Discard the bacon grease from the skillet and wipe clean with a paper towel.
Lay the cheese toast slices into the skillet and toast for 3 minutes on medium heat.
Flip and toast 2 minutes more or until lightly browned.
Remove the toast and set aside.
Place the mayonnaise into a small bowl.
Add the mustard and whisk until well combined.
Place the basil leaves on top of 4 slices of the toast.
Place the chopped cucumber into the chopped egg and toss together.
Sprinkle over the basil leaves on each slice of toast.
Slice the 2 eggs that were set aside and place 4 egg slices on each slice.
Crumble the bacon and sprinkle over each slice of toast.
Spread the mayonnaise mixture on one side of each remaining 4 slices of toast.
Place over each of the 4 sandwiches.
Prepare the pudding as directed on the box.
Fold in the blueberries until well combined.
Cover and place the pudding in the refrigerator for about 15 minutes or until slightly chilled.
Serve the pudding in small dessert bowls as a side dish to the sandwich.
Serves: 4
Cost per serving: This meal is a wonderful cool down summer dinner. It’s easy to make, filling and costs approximately $1.96 per serving to make.
